Fiesta Texas Celebrates ¡Viva la Fiesta! with Knott's Berry Farm-Inspired Food & New Entertainment
¡Viva la Fiesta! has returned to Six Flags Fiesta Texas on select dates now through May 4. This year's event sees a refresh on food offerings, which highlights boysenberry items from Knott's Berry Farm and additional sweets. New entertainment, such as Sonido 7 in Texas State Square and Rockville Beach Party, make their debut alongside returning favorites. Los Festivales Transforms for ¡Viva la Fiesta!
Though some food booths and entertainment offerings span into other sections of the park, most decor and festivities for ¡Viva la Fiesta! take place in Los Festivales. Texas State Square features multiple photo opportunities while the main thoroughfare of Los Festivales is adorned with streamers and vibrant decor pieces.
Knott’s Berry Farm Boysenberry Food & Merch Arrives at Fiesta Texas
The highlight of this year’s event is the introduction of boysenberry merchandise and fresh food items. Knott’s Berry Farm, now a sister park to Fiesta Texas, is synonymous with the boysenberry. Fiesta Texas has brought in a small taste of Knott’s with prepackaged foods and snacks for purchase, along with a boysenberry-themed food booth. We tried the boysenberry beef empanada and boysenberry BBQ mac and cheese during our visit. Both of these were great new additions to the festival. Each dish featured a unique hint of boysenberry without overpowering it. The overall flavor palate of both the BBQ sauce and salsa brought in a welcoming new twist to the park’s food. A historical display regarding Knott’s Berry Farm can be found in Six Flags Mercado with the merchandise offerings. While in Six Flags Mercado don’t forget to grab this year’s Fiesta medal.
Entertainment for Every Taste
Fiesta Texas features a great line-up of live entertainment during the event. New for 2025 is the Sonido 7. The group performs Latin music in Texas State Square, pairing nicely with the decor, environment and food booths. Returning in Teatro Fiesta is ¡Caliente! and Mariachi Los Soberanos. Over in Rockville, a reimagined Bubble Pop returns to Pete’s Eats Stage while the all-new Rockville Beach Party has made its debut in Rockville High School. Nearly every show will continue into the summer months with the exception of Sonido 7 and Mariachi Los Soberanos. These two entertainment offerings will end with the festival on May 4.
Food & Drink Booths Galore
On top of new boysenberry food offerings, several other booths are spread throughout the park. Adult beverages are available in Los Festivales and Crackaxle Canyon. Pictured above is Sippin’ Sombreros in Crackaxle Canyon, featuring beer, mixed drinks and a non-alcoholic mocktail. One of our favorite hearty items were the pepian de pollo tacos. The new option brought on a different flavor profile than past taco offerings during the event. Plenty of options are available to satisfy your sweet tooth. Our ultimate favorite were the bunelo nachos. Though topped with ingredients, the nachos are great on their own. Brigadieros are another highlight of the dessert menu. We found these to be incredibly sweet, but a great new offering during ¡Viva la Fiesta!
